Dairy free frosting made with real fruit! Vegan, creamy topping for cupcakes, cakes, pancakes and so much more! Ingredients: (approximately 2 cups) Confectioners sugar 16 oz Vegan butter 1 cup (8 oz) Fresh strawberries 10 oz Directions: Purée the trimmed and washed strawberries. Transfer the strawberry purée to a small saucepan and reduce it till it is thick. Cool the strawberry reduction completely. Whip the butter using a whisk mixer. Add confectioners sugar little at a time to the butter and continue whisking. Once sugar and butter are fluffy, add the cooled strawberry reduction to it and whisk till it is evenly incorporated. Make sure the strawberry reduction is completely cooled to avoid the butter from melting. Whisk till the mix is fluffy and soft peaks form. Transfer into a bowl and store covered in the refrigerator for a few hours (preferably overnight). Use it to frost cupcakes, as icing on the cakes or a dollop on pancakes!
