𝐁𝐚𝐜𝐚𝐥𝐚𝐢𝐭𝐨𝐬 (Puerto Rican Salted Cod Fish Fritters) These bacalaitos are a classic Puerto Rican street food found at many kiosks that surround the island’s beachsides. Typically they are made much bigger on the island and are seen hanging on pins over the deep fryer of whichever random food truck you decide to stop at. I often wait for The Puerto Rican Day Parades to indulge in these type of frituras but sometimes you just have to settle your craving. So what exactly are Bacalaitos for those who are unfamiliar? Bacalaitos are deep-fried codfish fritters made from a flour-based batter flavored with aromatic Puerto Rican herbs and spices. You can use fresh cod but I rather use the packaged heavily salted, nearly desiccated codfish. These have to be soaked and boiled to remove the salt and then shredded after to be added into the batter along with homemade sofrito, sazon, adobo, garlic, red bell peppers oregano and in this case diced scallions and vegetable stock. Typically the stock used is from the bacalao itself but the vegetable stock gives it an extra punch. After that the batter is spread out into oil and deep fried until golden brown. What you’re left with is a crispy result of something between an insanely flavorful funnel cake on steroids and a salted chip.
