Music Provided by Angelo LeRoi Recipes (I measured with my heart for some of this so they’re not exact I’m sorry): Iced Fig and Pecan Oatmeal Cookies 3 oz unsalted butter, room temperature 3/4 cup cup light brown sugar 1/2 large egg 1 teaspoon vanilla extract 1/2 cup flour 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/4 salt teaspoon salt 1/2 teaspoon cinnamon 1/2 cup cup chopped dried figs 3/4 cup cup oats 1/2 cup chopped pecans Icing 1 cup powdered sugar 2+ tablespoons water or milk Vanilla 1. Mix flour, baking powder, baking soda, salt cinnamon in a small bowl. 2. Mix softened butter and brown sugar in larger bowl for 2 minutes. 3. Add egg and vanilla, beat until creamy. 4. Add flour mixture slowly. 5. Add oatmeal, then figs and nuts. 6. Scoop onto tray and refrigerate for at least 30 minutes (ideally 1-3 hours, up to 72 hours). 7. Preheat oven to 350 an bake for 15 minutes. 8. Mix powdered sugar, vanilla, and milk/water for icing. Start with 2 tablespoons of water and keep adding until you get the right consistency. Drizzle on cookies and let it dry for a few minutes Hoe Cake Cookies 3 oz butter softened 1/2 tablespoon vegetable oil 2 tablespoons sugar 1/4 cup brown sugar 1/2 egg room temp 1 tsp vanilla 3/4 cup bread flour 1 tablespoon honey 2 tablespoons cornstarch 1/4 tsp baking soda 1/4 tsp baking powder 1/4 tsp salt 6 tablespoons cornmeal Syrup Swirl 2 tablespoons maple syrup 6 tablespoons dark brown sugar 1 tablespoon flour 1 tsp cinnamon 1. Mix filling ingredients and put in the freezer 2. Mix flour, cornstarch, baking soda, baking powder, salt, and cornmeal in a small bowl. Set aside 3. Cream butter, oil, sugar, brown sugar, until light and fluffy. 4. Add in egg, vanilla, honey and mix. 5. Mix in dry ingredients. 6. Remove half the dough from the mixing bowl, spread the rest across the bottom. Scoop small pieces of cinnamon mix into the dough. Spread other half of dough back in the bowl, then the rest of the cinnamon mix (this is to create a swirl). 7. Scoop and shape into dough ball VERY gently, do not over mix. 8. Refrigerate for at least 30 minutes (ideally 1-3 hours, up to 72 hours). 9. Bake 10-12 minutes at 350.
