⬇️⬇️English recipe follows⬇️⬇️ 鴨腿湯飯 材料: 急凍鴨腿2隻 金華火腿3片 勝瓜1條 白飯1碗 陳皮2片 芫荽、蔥適量 處理: 1. 陳皮,清水浸軟。 2. 鴨腿,清水解凍。 3. 鴨腿解凍後,加入粗鹽1湯匙乸15分鐘,去除雪味、腥味,及加入少許鹹味。 4. 大火在煲內煲滾清水1升。 5. 加入陳皮連同水分在煲內。 6. 鴨腿,清水洗乾淨,擎乾水,廚紙索乾。 7. 加入: a. 胡椒粉半茶匙 b. 老抽1/4湯匙 掃勻。 烹調: 1. 大火在鑊中燒熱油1湯匙。 2. 放鴨腿落鑊,皮向下,轉中慢火煎香。 3. 鴨腿一面已煎至金黃色,反轉另一面繼續煎,除去羶味,轉大火繼續煎。 4. 鴨腿,兩面都已煎至金黃色,提高鑊,擎乾油分,放上廚紙索乾油分。 5. 水已煲滾,放鴨腿入煲,轉中火煲20分鐘。 6. 勝瓜,輕手刨去硬身的皮,切兩端,斜刀切一舊舊。 7. 芫荽,切出根部,放入湯內,增加香味。 尾段切碎。 8. 蔥,切粒。 9. 鴨腿湯,已滾了20分鐘,加入金華火腿片及勝瓜,冚蓋,焗至勝瓜腍身。 10. 盛好白飯在大碗內,排好鴨腿、勝瓜及火腿,鴨腿湯淋在飯上面。 11. 芫荽及蔥灑上飯上面。 12. 完成,可享用。 Duck's legs rice in soup Ingredients: Frozen duck's legs 2 Nos. Jinhua ham 3 slices Luffa 1 log Rice 1 bowl Dried orange peel 2 pcs Coriander, green onion, appropriate amount Preparation: 1. Dried orange peel, soak in tap water until it turns soft. 2. Duck's legs, deftost in tap water. 3. Duck's legs have been defrosted, add in cooking salt 1 tbsp, season for 15 minutes to remove unpleasant smells and tastes and add some salty tastes to them. 4. Heat up water 1L at high flame in pot. 5. Put dried orange peel with water into the pot. 6. Ducks' legs, rinse with tap water. Drain. Dry with kitchen towels. 7. Add seasoning: a. Pepper 0.5 tsp b. Dark soya sauce 0.25 tbsp Brush well. Steps: 1. Heat up oil 1 tbsp at high flame in wok. 2. Put duck's legs in wok. Skin faces down, fry well at medium~low flame. 3. Duck's legs, one side has been fried into golden yellow, flip them over and continue frying, to remove unpleasant smells. Turn to high flame and continue frying. 4. Duck's legs, both sides have been fried into golden yellow, lift up the wok and drain the oil. Dry tbe legs with kitchen towels to absorb the oil. 5. Water boils up, put duck's legs in pot, boil at medium flame for 20 minutes. 6. Luffa, lightly peel off the rough skin. Cut both ends. Slantly cut in pieces. 7. Coriander, cut the root. Put it into the soup to increase the flavour. The rest, chop well. 8. Green onion, cut in cubes. 9. Duck's legs soup, has been boiled for 20 minutes, add in jinhua ham and luffa. Cover up the pot until the luffa turns soft. 10. Put rice in big bowl, duck's legs and jinhua ham in row, pour the duck's leg soup on top of rice. 11. Coriander and green onion are to be put on top of the rice. 12. Complete.
