One of my absolute favorite grasses is the North American native "Northern Sea Oats" (chasmanthium latifolium), also called Inland Sea Oats. It is not only a gorgeous stunner in the garden, it is a clumping slow spreader that will naturalize in happy conditions (poor to moderate soils, medium moisture but tolerates drought, and will grow in sun or partial shade but spread less in shade). We use this one in fresh and dried arrangements and we've also found many a bird feasting on the seed pods in the late winter! The grass rustles and waves beautifully in the sun and changes from a stunning green to a coppery bronze in fall, making it a full-season interest plant. The grasses stay upright until weighed down by heavy snow or wind and simply need to be cut down in spring (the stalks can be used for mulch in the garden). If the oats are happy, be aware that they can spread via seed or rhizome, so give them a bit of space to spread and be happy, or deadhead them and give the seeds to friends or birds if you have a lot! You can divide this grass quite easily or start from seed. It will be shorter in the first season and get taller as it perennializes!
