This week in the Highlands was… a lot. We had another storm, fallen trees, sideways weather, and one surprisingly peaceful moment with a chainsaw. So in classic Gentle Season fashion, I decided to make a few small pockets of order in the chaos — a wrapping station, some handmade Christmas candy, and a little progress on the house. If your December brain also feels like a snow globe someone keeps shaking, you’re in good company. 💛 In this video: 🌲 Stormy Highland mornings 🪓 Chainsawing fallen trees (unexpectedly therapeutic) 🎁 Setting up a Christmas wrapping station 🍫 Homemade coconut chocolate “Bounty Bars” ⸻ 🍫 Homemade “Mounds / Bounty” Coconut Chocolates (4 ingredients, no fuss) Ingredients: • 2 cups desiccated coconut • ½ cup sweetened condensed milk • 1 tsp vanilla • 200g dark or milk chocolate • Pinch of salt Method: 1. Mix coconut, condensed milk, vanilla, and salt. 2. Shape into small bars or balls. 3. Freeze 15–20 minutes. 4. Dip in melted chocolate and chill until set.
