5:00 a.m. on a Saturday. This week we’re juggling production, deliveries, grain spawn, and a full farmers market. All while trying to grow just a little bit more than last week. We pasteurize 29 new substrate bags, attempt another round of clean grain spawn after a contamination setback, deliver 5 kilos to our restaurant, and prep everything we have for the market. By noon on Saturday, we’re sold out. And at the same time, we start something much slower. Our first small experiment with Maitake (Hen of the Woods), one of the most difficult and sought-after mushrooms to grow. Building a small mushroom farm in Switzerland means balancing what pays the bills today with what might grow months from now. Thanks for being here. We will see you next Sunday :)
