THAI GREEN CURRY RECIPE Ingredients: Green curry paste (I can teach you how to make your own curry paste, but it's easier for many of you to buy a ready paste, even for the balancing of flavours) Coconut milk 1 can Vegetable oil Chicken (or prawns) thinly sliced 300 gr Kaffir lime leaves 4 1 lemongrass stalk Fish sauce 1 tablespoon Palm sugar 1-2 tablespoon thai eggplants 4-5 (or half a regular eggplant will do) String beans 5-6 Onion or shallots or spring onions 1 red chili 2 Thai basil PROCEDURE: In a wok, get the oil ( a couple tablespoon) hot, add 2-3 tablespoons of curry paste and stir it until fragrant. The paste will start releasing all of its essential oils. When you can smell its amazing aroma it's time to add some coconut milk (half a glass). Let it boil, stirring constantly, until the oily part starts separating (you'll see it). Throw the chicken flakes in, and keep stirring for 3-4 minutes, until almost fully cooked. Season with fish sauce and palm sugar, add the kaffir lime leaves and lemongrass chopped (bruise them in order to let all the fragrance out). Add the remaining coconut milk, the vegetables, let it gently boil 3-4 minutes. Just before serving, season again if needed, sprinkle some fresh lime juice (optional) and a bunch of fresh thai basil. It should be spicy, sweet, sour and salty. Please note: it doesn't have to be too creamy, so in case add some hot water.
