Check it out here: / @sweetlifelanta How to cook Pad Thai: Pad Thai is undoubtedly the most famous and delicious dish in this country. If you come to Thailand and didn't try it, is means you didn't really come to Thailand yet... Pad Thai one of the dishes that many Thai people don't know how to cook and not bother to learn how to cook at home. Do you know why? Because you can find Pad Thai on every corner in Thailand in affordable price for everyone. To be honest, before I teach cooking class, I never think to learn how to cook Pad Thai. Now Pad Thai is one of the most popular dishes in the world. But is it your taste? Is it Pad Thai the way you want to eat? Why don't you cook your own Pad Thai your own taste. Just the way you like to eat. Come follow me! Let me tell you all the hidden secret ingredients so that you can cook it in a quick, easy and absolutely delicious way. Ingredients for 2 portions: Dry rice noodle, about 200 gram Tofu (firm) 40 gram (or as much as you like) Shrimp/chicken or vegetarian (you could even add carrot or zucchini but that is not traditional) Bean sprouts 100 gram Chives or Green onion (about 2 stalks) Egg 1 big shallot, or 2 small ones Garlic 3-4 cloves Roasted peanuts as much as you like 1 lime Dried chili flakes, to your taste, as garnish. Palm sugar or white/brown sugar about 1 teaspoon Fish sauce about 2 tablespoon (or salt for a vegetarian version) Tamarind or tamarind paste 2 tablespoons Cooking oil (any type of vegetable oil with mild taste, so no olive oil) about 2 tablespoons water about 60 ml. Water is helping your noodle cook properly. If your noodle did not properly cook just add a bit more water. REMEMBER YOU COOK PAD THAI NOT NOODLE SOUP Preparation: Soak the dry rice noodles in room temperature water for about 5-10 minutes before you start cooking Dice the tofu Chop shallot, garlic and chives or green onion Prepare the meat of your choice, prawn or chicken. Now it is time to cook! Turn on the fire and add cooking oil Add garlic and shallots before oil gets hot and stir-fry until good aromas fill your kitchen Add the tofu and stir If you are adding meat, this is the time to add it. If you are adding an egg, you will now push everything in the wok on the side to make space for the egg, then break it into the wok and cook it while scrambling When the egg is cooked, gently stir it into the mix Add the noodles followed by a bit of water (about 60 ml) Now is the time for the flavours! Remember, you only need to play with balancing 3 flavours: sweet (from the sugar) sour (from the tamarind) and salty (from the fish sauce or salt) Let's start with a small amount first. If it doesn't fit your taste you can always add more after. I grow up cooking without using teaspoons for cooking. We alway taste during cooking. Try not to stick with exact number. But if you like you can use this as a guideline: 1 teaspoon of sugar for the sweet taste 2 tablepoons of tamarind for the sour taste 2 tablespoons of fish sauce for the salty taste Stir them all together. Taste and see if you need to add more sugar, tamarind or fish sauce Add bean sprouts and chives and stir well Now the presentation: Put the Pad Thai on the plate, and add on the side: Chili powder Peanuts Lime Don't forget to squeeze the lime and smile with me!
