Freeze the watermelon: Spread the watermelon cubes on a tray in a single layer and freeze for at least 2–3 hours, or until solid. 2. Blend the sorbet base: In a food processor or high-speed blender, combine the frozen watermelon, mint leaves, lime juice, sugar or honey (if using), and a pinch of salt. 3. Blend until smooth: Blend until smooth and sorbet-like. Scrape down the sides as needed. If it’s too thick, add 1–2 tablespoons of water or more lime juice to help it blend. 4. Taste and adjust: Taste and adjust sweetness or acidity, then blend briefly again if needed. 5. Serve or freeze: Serve immediately as a soft-serve style sorbet, or transfer to a container and freeze for 2 hours for a firmer texture.
