Add olive oil or lard in a large pot or dutch oven and the diced chuck steak. Season well with salt and pepper and cook for 5-6 minutes or until browned all over. Add onions and red bell pepper and cook for 3 minutes, stirring frequently. Add garlic and cook for 1 minute. Add Hungarian paprika, smoked paprika, and ground caraway seeds. Mix well and cook for 2 minutes, stirring frequently. Add tomato paste, diced tomatoes, beef stock, balsamic vinegar and brown sugar. Mix well to combine and bring to a boil. Cover with a lid and transfer to the oven for 2 1/2 hours or until the beef is fork-tender. You may need to add beef stock if the sauce reduces too much. Remove the goulash from the oven and check the seasoning. Serve in bowls alongside pasta, toast or any of your favourite sides. Garnish with sour cream and flat-leaf parsley. Dig in.
