This is a family recipe, coming from my dad, he loved his chicken soup with a piece of fresh baguette. This is a remake video of an original video I published in September 2025. This remake was prompted by my oldest daughter recovering from the flu, asking for this soup. I went back to the older video and made it shorter, more digestible, or so I hope. Everyone needs a good chicken soup in their lives. I hope this one becomes yours! Thanks for watching! Very little natural flavor if you use the skinless, boneless chicken. You can always remove the fat or skin after cooking. Once refrigerated, you can scrape off the fat at the top if needed. Very simple! Vegetables can be increased or decreased depending on how much veggies you like in your soups. In this video, I use a lot more than in this basic starting point recipe. Enjoy! Ingredients 2lbs chicken thighs (with bone) or one whole chicken 5 celery stalks peeled and chopped 5 carrots peeled and chopped 3 onions peeled and chopped 5 potatoes peeled and cut in quarters 1 cup rice Seasonings: salt pepper italian seasoning garlic, garlic salt, or garlic powder bouillon cubes Start by boiling at least 16 cups of water in a large pot. Add bouillon cubes/salt, pepper, italian seasoning (start w 2 Tblsp; add more if you like), minced garlic Add chicken pieces or whole chicken. Bring to boil again, lower to simmer and cover While chicken is cooking: Chop the Celery, Carrots, and Onions Add to the soup. Make sure it stays boiling again. You may need to increase the temperature to get it boiling again, then lower to simmer. Simmer and cover. Cook for 40 minutes -1 hour. Peel and slice potatoes into quarters Add rice and potatoes in for 20 minutes. Your total cooking time for chicken is 1 hr 15 min. Enjoy!
