'Human beings don't inherently need to trash the planet to eat,' explains Leah Penniman, the co-director and farm manager at Soul Fire Farm. Regenerative farming uses the same space to grow different crops during changing seasons, bypassing the use of traditional machines for tilling and instead incorporating the use of livestock and cover cropping to enrich the soil. If 85% of U.S. cropland used cover crops, approximately 100 million tons of carbon dioxide could be absorbed by Earth's soil each year.
