MASTER COOKBOOK RECIPE #144 CREAM PUFFS Ingredients: 1/2 cup salted butter 1 tsp granulated sugar 1/4 tsp salt 1 cup all-purpose flour 1/2 cup water 1/2 cup milk 4 large eggs Instructions: Preheat the oven to 375°F and line two baking sheets with parchment paper. Melt butter in a medium saucepan over medium-high heat, then add sugar, salt, and water. Bring to a boil, quickly sift in the flour, and stir until a film forms on the bottom of the pan. Remove from heat and let cool for 6 minutes. Mix the mixture with a hand mixer or by hand. Add eggs one at a time, stirring vigorously to incorporate each. Using a hand mixer makes this process easier. Prepare an egg wash by whisking the following together: 1 egg 1 Tbsp water Use a large tablespoon and spoon out puffs about 1-1/2 inches apart on a lined baking sheet. Brush with egg wash and bake until golden, about 30 minutes. Cool on racks. Fill with Recipe #145 Pastry Cream. Dip in melted chocolate if desired. These freeze well so freeze the leftovers.
