A meal that keeps your body light and your spirit calm. 🦐 Ingredients – Curry Shrimp • 1 lb large shrimp (cleaned and deveined) • 1 tbsp green seasoning (blend of scallion, thyme, garlic, ginger, and parsley) • 1 ½ tbsp curry powder • ½ tsp turmeric (optional, for extra color) • 1 small onion, sliced • ½ bell pepper, sliced • 2 cloves garlic, minced • 1 small tomato, diced • 1 scotch bonnet or pinch of chili flakes (optional, for a little kick) • 1 cup coconut milk (light or regular) • 1 tbsp olive oil or coconut oil • Salt and black pepper to taste • Fresh thyme and squeeze of lime to finish ⸻ 🍚 Ingredients – White Rice • 1 cup jasmine or parboiled rice • 1 ¾ cups water • Pinch of salt ⸻ 🥬 Ingredients – Steamed Cabbage • ½ head cabbage, thinly sliced • 1 small carrot, julienned • ½ onion, sliced • 1 tbsp olive oil or coconut oil • Pinch of salt and black pepper • Dash of vinegar (optional, for brightness) ⸻ 🔥 Instructions 1. Prep the Shrimp • Season shrimp with green seasoning, a pinch of salt, black pepper, and a little curry powder. • Let it marinate for at least 15 minutes. 2. Cook the Curry Shrimp • In a pan, heat oil and burn the remaining curry powder for 30 seconds to release that deep aroma. • Add onion, garlic, bell pepper, and tomato — sauté until softened. • Pour in coconut milk and bring to a light simmer. • Add shrimp and cook 4–5 minutes until pink and tender. • Adjust seasoning with salt and pepper, and finish with thyme and lime juice. 3. Cook the Rice • Rinse rice until the water runs clear. • Bring water to a boil with a pinch of salt, then add rice. • Cover and cook on low heat for 15–18 minutes until fluffy. 4.
