Recipe: -2 lbs med shrimp (with shells) -1/4 cup corn oil -1/4 cup all purpose flour -extra chicken broth -1 lb. Scallops (save juice) -2 cans lump crab meat (save juice) -1/2 lb andouille sausage cut in small pieces -1 Cornish hen -Water to boil chicken in -1 onion diced -3 stalks celery diced -1/2 green bell pepper diced -1 lg can peeled tomatoes drained and diced -12 to 15 pieces if okra sliced -1 to 2 bay leaves -2 cloves garlic -1/2 tablespoon salt -1 tablespoon old bay seasoning -1 teaspoon cayenne pepper (Add more or less to your own heat preference) -1 tablespoon file' powder Peel and devein shrimp. Put shrimp in fridge and place the shells in a pot and cover with water. Simmer over medium low heat until liquid is reduced by half. Strain out shells and discard them. Save the broth. Select a medium size pot to boil the chicken in. Place the hen in the pot and cover with water. Boil till chicken is cooked through. Remove the chicken and set aside to cool. Strain the chicken broth and save. When the chicken is cooled, remove meat from the bones and discard the bones. Get a large pot that will hold all ingredients. Add oil and flour to the pot over medium high heat. Cook and stir for several minutes until dark brown. Once browned, add the onions, celery, bell peppers, okra, tomatoes, garlic, bay leaves, cayenne pepper, old bay seasoning, and salt. Low boil for 45 min. Add chicken, shrimp, crab, sausage, and scallops to the pot. At this point you can add the shrimp broth, crab juice and scallop juice to the pot. If you need more liquid add in some extra store bought chicken broth. Bring to a boil till shrimp are pink, then take off heat. Stir in the file' powder. Enjoy! 😋
