Add the watermelon and mint leaves to the glass. 2. Muddle them gently. 3. Add the lime juice, simple syrup, and white rum to the glass. 4. Add some crushed ice. 5. Mix thoroughly. 6. Top with soda water. 7 Garnish with a mint sprig and watermelon slice. *** SIMPLE SYRUP 8 oz/240 g Sugar 8 oz/240 ml Water Method 1. Combine the sugar and water in a medium sauce pan on the stove. 2. Gradually heat until the sugar is full dissolved into the water. 3. Allow to cool and then add to a clean bottle. 4.
