This is a recipe for a Korean style spicy pork knife cut noodle soup. The inspiration is from kalguksu (칼국수), which often uses clear broth with zucchini and chicken but is made really starchy because the noodles are cooked in the soup broth. My parents loved that dish but I hated it as a kid. Not enough flavors. I might like it now when I'm hungover except for the starchy part. Maybe I should try to make it on a future show with real deep chicken flavors. Well, this noodle soup we are making today uses the kalguksu noodles from scratch like any Korean grandmas would be impressed but the soup base and flavors will be bold and addictive any young person from every part of the world would like this. It may be a bit spicy for a few of you but not really. If you can handle some gochujang, there is nothing to worry about.
