Ingredients: For the Chocolate Cake: 1 and 3/4 cups (220g) all-purpose flour / Plain flour 2 cups (400g) sugar 3/4 cup (90g) unsweetened cocoa powder 1 and 1/2 teaspoons baking powder 1 and 1/2 teaspoons baking soda 1 teaspoon salt 2 eggs 1 cup (240ml) whole milk 1/2 cup (120ml) vegetable oil 2 teaspoons vanilla extract 1 cup (240ml) boiling water For the Filling and Topping: 4 cups (600g) fresh cherries, pitted and halved (reserve some whole cherries for decoration) 1/4 cup (50g) sugar (for the cherries) 2 tablespoons Kirschwasser (cherry brandy), optional. See note for non-alcohol 3 cups (720ml) heavy whipping cream 1/3 cup (40g) powdered sugar Chocolate shavings or curls for decoration NOTE: Cherry Brandy Substitute Recipe: 1/4 cup cherry juice: Provides the cherry flavor base. 1/2 teaspoon almond extract: Adds a depth of flavour that simulates the nuttiness of brandy. 1 teaspoon sugar (optional): If your cherry juice isn't very sweet, you can add a bit of sugar to match the sweetness of cherry brandy.
