Salmuera/brine In this video, I will share a step-by-step Argentine grilling experience: We will grill Flank Steak on a vertical spit, also known as an "asador" or "estaca," which means stake. This vertical grilling style requires patience and a few key tricks to keep the meat moist and humid throughout the grilling process. Step 1: Prepare the Flank Steak for the grill; the first step is the most important, but it is simply to take your meat out of the fridge and let it rest for at least 1.5 hours before going to the grill. The longer you leave it, the better (the ideal range is 3-4 hours, depending on your room temperature) Step 2: Prepare your fire; light a decent fire close to where your vertical spit will be placed. Ideally, use fruit wood that has decent embers and flame! The combination of both will give us ideal grilling conditions for vertical spit cooking. Step 3: Trim any excess fat from the flank steak, lightly salt your meat, and lay it on the spit or vertical stake (estaca/asador) Step 4: Grill the flank steak around 30-50cm (depending on your heat) from the flames and embers for 2 hours on the fat side first (fat side facing the heat) Step 4: Throughout the grilling process, lightly paste the Flank Steak with your Salmuera (brine) Step 5: Turn your meat after 2 hours and let it slowly grill the other side for 45 mins more. Step 6: Once the flank steak is fully grilled make sure to let it rest before slicing up. I recommend you let it sit and rest for at least 5-10 mins! Step 7: Slice the flank steak for service long ways! Against the grain. Serve it with some chimichurri and nice salad, and even some wine! Enjoy!
