The video is in Bengali, so for international audiences, below is an excerpt! This is my take on how to make one of the most popular Indian Chinese dishes, Restaurant-style Chicken Manchurian! This is a great combo of hot, sweet, sour and umami flavours. We start with cubed chicken breast and marinate it with garlic, ginger, salt and pepper. ONCE MARINATED for half an hour, coat the chicken in a batter made of cornflour, egg and water, MIX WELL, and then fry them in hot oil for about 3 minutes. It is crucial to not over fry the chicken at this stage as there will be more cooking done with the sauce. This sauce is cooked in high heat, so wok is a great option! First is sautéing garlic, ginger and green chillies, then we are going to add red onion and bell peppers. These will provide a delicious crunch with a dash of colour and flavour. Next goes the soy sauce, tomato catchup, white pepper and water. Keeping the heat high, add the chicken cubes & cook for a couple of minutes. We bring an end to the cooking by adding some cornflour slurry, which is made with a 1 to 1 ratio of cornflour and water; this will very quickly thicken and bring the sauce together.
