Wonderchef Nutri-Blend: https://amzn.to/3LTzOWz Ingredients: 1. Potatoes - 12 pcs of small size [peeled & pricked] 2. Curd - 1 cup 3. Fennel powder - 1.5 tsp 4. Ginger powder - 1tsp 5. Red chilly powder -2tsp 6. Oil to deep fry the potatoes 7. Water & salt as required 8. Whole spices (Black & Green Cardamom, Cinnamon stick, Cloves, Black Pepper & Bay leaves) 9. Cumin seeds - 1tsp 10.Turmeric powder 1/2tsp Process: Prepare Potatoes for Dum Aloo - 1.Clean the potatoes with water & peel it 2.Prick the potatoes with kitchen fork Prepare Curd Paste for Gravy - 1. Add a cup of curd in mixing bowl 2. Add 1.5tsp Fennel powder in mixing bowl 3. Add 1tsp ginger powder in mixing bowl 4. Mix it all with spoon and its ready Prepare Red chilly syrup for Gravy - 1. Add 2tsp red chilly powder in a bowl and some water 2. Mix it and its ready Cooking Dum Aloo - 1. Deep Fry the pricked potatoes Only up to 60-70% in Mustered oil 2. Strain it and transfer in a plate For Gravy preparation - 1. Pre-heat the pan and add 2tbsp oil 2. Add whole spices & cumin seeds 3. Mix it well in the pan 4. Add red chilly syrup & mix it in the pan 5. Add turmeric powder & mix it in the pan 6. Add asafetida (hing) & mix it in the pan 7. When the gravy is bit thick , add curd paste into it & mix it 8. Add salt to taste & mix it well-cooked for 5 min 9. Gravy is ready now Deep fry the pre-fired potatoes again to make it hollow from inside - 1. Pre-heat the pan and oil 2. Add potatoes and fry it for 5 mins 3. Turn off the flame 4. Put the heated potatoes in gravy directly (which we already cooked in previous steps) 5. Mix it all well with gravy and fried potatoes Final cooking step for Kashmiri Dum ALOO 1. Put the Mixture of gravy and potatoes in stove again (if wish add little worm water) 2. Cover it & cook for 5 min 3. Kashmiri Dum Aloo ready 4. Let serve it and enjoy with chapati or naan
