These Choliya Ke Pakora (or Hari Chane ke Pakode) are the ultimate vegan & gluten-free snack for rainy days, tea time, or any craving. Made with fresh green chickpeas, basic spices, and chickpea flour, they come together in under 30 minutes! In this video, I'll show you the secret to getting perfectly crispy pakoras that are soft and flavourful inside. A must-try seasonal treat! ⬇️ FULL RECIPE WITH DETAILED INSTRUCTIONS BELOW ⬇️ Ingredients: · 2 cups fresh green chickpeas (choliya/hare chane), shelled · 1 cup besan (gram flour/chickpea flour) · 1 medium onion, finely chopped · 1-2 green chillies, finely chopped · 2 tbsp fresh coriander leaves, chopped · 1 tsp ginger, grated · 1 tsp cumin seeds (jeera) · 1/2 tsp turmeric powder · 1/2 tsp red chilli powder (adjust to taste) · 1 tsp coriander powder · Salt to taste · Water, as needed · Oil for deep frying Instructions: 1. Prepare Batter: In a large mixing bowl, combine shelled green chickpeas, chopped onion, green chilli, coriander, ginger, and all the dry spices. 2. Add Besan: Add the besan (gram flour) to the mixture. Do not add water yet. Mix everything well. The moisture from the onions and chickpeas will help combine it. 3. Bind: Sprinkle just enough water (1-2 tbsp usually) to bind everything into a thick, coarse mixture. The chickpeas should be well-coated but the batter should not be runny. 4. Fry: Heat oil in a kadhai on medium heat. Once hot, drop small, flattened portions of the batter into the oil. 5. Cook: Fry on medium heat until golden brown and crispy from both sides. Avoid over-crowding. 6. Drain & Serve: Remove with a slotted spoon and drain on paper towels. 7. Enjoy! Serve immediately with your favourite green chutney, tamarind chutney, or tomato ketchup! PRO TIPS: · Do not make a smooth batter. The coarse texture gives the best crunch. · Fry on medium heat so the pakoras cook through without burning. · You can add a tbsp of rice flour for extra crispiness.
