On a beautiful sunny day in the heart of our village, my dear father and I were heading to the garden, while my loving mother decided to prepare a special two-layer Tahchin for lunch. After lunch, we were expecting guests – my sister, my niece, and my dear brother-in-law. At this time of year, the farmers’ work gets busier, especially with the ripe and delicious oranges of Mazandaran ready to be picked. I woke up early to help my mother prepare the Tahchin ingredients. The ingredients included potatoes, onions, mushrooms, chicken breast, soy, yellow pepper, turmeric, tomato paste, and local butter. First, we fried the potatoes and set them aside. After the onions turned golden, we added the soybeans that had been soaked in warm water for an hour and sautéed them together with the onions. Then we removed the soy and onion mixture and added two tablespoons of local butter to the pan. We sautéed the chicken for half an hour, seasoning it with salt, pepper, and turmeric. Next, we added the mushrooms for a brief sauté until they released some water. Then a few tablespoons of rice were added to the tomato paste; the trick for the rice is that adding turmeric to the water makes the rice golden and reduces the amount of tomato paste needed. After preparing the Tahchin, I helped my mother and then went to the garden to help my father. When we returned, the guests had arrived. We laughed, talked, and enjoyed a delicious two-layer Tahchin together.
