We visit the Wood Egg Museum in Hiroshima, to tour the Otafuku factory to see the history and the behind-the-scenes of the original okonomiyaki sauce. Okonomiyaki, also known as a Japanese pizza or a savoury pancake, is a famous Japanese dish that can be eaten as a meal or a snack. Meaning “as you like it, fried”, there are many regional styles and any toppings you like, though typically consists of a flour batter with chopped cabbage and meat or seafood. The Wood Egg Museum in Hiroshima is the Head Office of Otafuku, the company that is synonymous with okonomiyaki sauce, the rich, thick, sweet-savoury brown sauce that tastes like a mix of Worcestershire sauce, ketchup, and barbecue sauce. There, we took a free tour of the interactive museum and the factory, and took a cooking class to learn how to make Hiroshima’s famous layered okonomiyaki on professional hotplate griddles.
