I made Potato Latkes from scratch with homemade schmaltz, applesauce and matzo meal. I caught my good friend and neighbor Greg while he was doing yardwork and invited him over to try one. He was gracious enough to let me film despite working in the sun for hours before. Thanks Greg! Schmaltz: Skin three chickens and render the fat out over a medium flame. Chicken fat has a delicate but savory flavor. Applesauce: 6 apples 1 cup water 1/2 c maple syrup 2 ts cinammon 2 ts nutmeg Matzo Meal: 2 c flour 1 c water mix into a dough. Dust rolling surface with extra flour and roll as thinly as possible. Poke small divots with a fork and bake at 450 until crispy. 7 minutesish Potato Latkes: 2 russet potatoes 1/2 onion 1 egg 1 tb matzo meal 2 ts salt pinch pepper Fry the latke mixture in schmaltz over a medium high heat until the outside is golden brown and crispy. Serve with applesauce and sour cream I paired my Latkes with @perrierjouet . The half bottle can be found at @VideosTotalWine . Champagne and latkes go really well together.
