I made this video to try and show the method of direct and indirect grilling for some of you newer cooks.I did use my gas grill for this but you can also use you charcoal grill using the same method.If using charcoal, the direct heat would be directly over top of your burning coals and then indirect would be if you placed something on the grill racks over to the side where you don't have any coals burning.This method allows you to cook without burning which can sometimes come when you only use the direct heat method.A great example would be chicken with skin on which flares up a lot when grilling.It also happens with a burger if you are using something that has a lot of fat in it.Remember most all the time you will want to close your lid with indirect cooking so you can keep the temp up on your grill and food continues to cook.
