Story: A Horse Called Now by Ruth Doyle and Alexandra Finkeldey Recipe for Buttermilk Raisin Tart Ingredients for rich, sweet pastry: 225g / 8oz plain flour and a pinch of salt 115g / 4oz butter 55g / 2oz caster/fine sugar 1 egg yolk cold water Method for pastry: 1. Rub butter into flour. 2. Add sugar. 3. Combine egg then water with the flour and sugar, until it forms a dough. 4. Roll out so that it is big enough to line a 23cm/9" deep tart tin. 5. Prick the base all over with a fork then brush with a little of the beaten egg you'll be using for the filling. 6. Bake in a hottish oven for about 15 minutes. Set aside while you make the filling. Ingredients for the filling: 85g / 3oz caster/fine sugar 1 heaped tablespoon plain flour pinch of salt 1 teaspoon grated nutmeg 4 eggs, beaten 1 teaspoon vanilla essence 425ml / 3/4 pint buttermilk 175g / 6oz raisins, plumped up by soaking in boiling water for a few minutes. Method: 1. Mix together sugar, flour, salt and nutmeg. 2. Blend in eggs using a whisk. 3. Add vanilla and buttermilk and stir well. 4. Cover pastry base with raisins, then pour the buttermilk mixture over. 5. Bake at about 180C/350F for about 30 minutes or until set.
