Filmed in 1987 by Faith Day, this is a common, easy-to-recognize mushroom you can find in large quantities in autumn, growing on decomposing wood. It's white and undifferentiated inside, like cream cheese, or if you're a vegan, like tofu. It's great in any kind of recipe that calls for mushrooms, and it's a flavorful replacement for tofu. Beware of poisonous earthballs (Scleroderma spp,), which are hard instead of soft, and soon turn black inside. When you cut one open, an immature, deadly amanita will have a stem and gills inside.
