Banana Corn Puff Puff is basically made from ripe bananas, cornmeal, and flour. When you have overripe bananas at home, don’t throw them away; you can use them to make these puff puffs. Ingredients 100 ml lukewarm water 7 g dry yeast 1 tsp salt 6 large overripe bananas 2 cups cornmeal 2 cups self-rising flour oil for frying Instructions 1) Pour lukewarm water into a bowl, add the yeast, and salt, and mix. 2) Peel the bananas, add them to the mixture pour the mixture above, and mash. 3) Add half of each of the flour and cornmeal, then mix it with a spatula. Add the remaining flour and cornmeal progressively to your satisfaction. You do not have to use all the flour and cornmeal. Cover the mixture and let it sit for about an hour. 4) Heat the oil to a high temperature (about 180°C). Before frying the dough, stir it to check its consistency. If it is light, just add a little cornmeal to make it heavy (It should have the same texture as a cake dough). Then fry the dough by plucking out small balls with your fingers and putting them gently into the oil (don't overcrowd the pot with the dough balls). Let them cook for a few minutes by stirring them from time to time. 5) When they are golden brown, carefully take them out of the oil. They are ready to be served. Notes 1) If you don’t have a masher, you can mash the banana with a fork or a blender. 2) Another way to know if the oil is hot enough is to put a small ball of dough in it.
