(dried bananas shown) The low temperature and quick drying preserve vitamins and taste The machine works by boiling off the water in food in the microwave oven under vacuum. (dried tomatoes shown) Vacuum allows the machine to boil water at temperatures as low as 35 C. No nitrite salts added to this dried pork meat, this red color is straight out of the oven. Food is cut into slices of about 2cm thickness Some fruits , like oranges and apples, have to be juiced or pureed first Food is weighted Same for meat Food is put in the microwave oven power is set The duration is set The scale for water output is tared The maximum water weight we want to draw out it set I use 45% of initial weight for pork and 80% for pinapple The vacuum pump starts then stops automatically when desired vacuum is reached The oven starts after vacuuming When the microwave timer runs out or the weight of water to evaporate is reached the machine stops Monitoring is made through several indicators. Pressure Temperature of incoming steam. How it works The lid and bowl are sealed with a silicone gasket, and held together by the vacuum. A tube goes from the bowl, through the oven wall, to the condenser. (yes this is safe) The condenser is a stainless steel tube with a copper coil inside. Pressure sensor Temperature sensor The condenser and the bowl are initially vacuumed using a vacuum pump, then vacuum is maintained by condensing water vapours back to water vacuum pump The sensors are connected to the electronics in the box Water is pumped from the bucket.... ... to the copper coil in the condenser ... ...and then to the fan cooled radiator before returning to the bucket Condensed water runs down into a collection vessel... ...resting on a scale measuring the water collected
