St. Patrick's Day - Mulligan Stew - A Stew With Lots Of Vegetables That Is Very Satisfying

This stew has the tenderest beef; it just melts in your mouth. Plus, there are lots of veggies in it, too. This soup can also be called Irish stew, hobo stew, burgoo and community stew, but whatever you call it, it's super good. To drive home the Irishness, I like to serve it with a potato roll. So this St. Patrick's Day, celebrate with a bowl of piping hot mulligan stew and a potato roll. Enjoy, Michael P.S. Don't forget to hit like and subscribe. Coat 5oz of stew beef with 1 tablespoon of flour and 1/4 teaspoon of pepper. In a dutch oven, pour 1 teaspoon of olive oil and add the meat. Once the beef is nicely browned, pour in 1 cup of beef stock, 1/4 cup of water, 1/2 bay leaf, 1/8 teaspoon of garlic salt, 1/8 teaspoon of oregano, 1/8 teaspoon of basil and 1/8 teaspoon of dill. Cover and simmer for 2 hours. When it gets close to 2 hours, chop 1/4 of an onion, 1 celery stalk, and 3 small potatoes. Toss them into the pot along with 1 cup of frozen mixed vegetables and 1/4 cup of lima beans. Cover and simmer again for 40 more minutes. Mix together 1/2 teaspoon of cornstarch and 1 teaspoon of water and then pour into the stew to thicken it. Stir until distributed. Lastly, add in 1 teaspoon parsley. Serve hot with a potato roll to make it more Irish.
