One of our favorite fire pit recipes, today we’re going to grill some mouth watering pork belly chops dressed with a fiery nduja dressing and accompanied by some delicious crispy squashed potatoes and charred spring onions. Pork belly is generally thought of as a slow and low joint with the perfect meat to fat unctuousness! But when sliced into thin chops the layers of fat will render and crackle over the dry heat of the flame, developing an incredible charred crust. If you haven't heard of nduja, then where have you been? Nduja is a magical, spicy Calabrian cured sausage which is amazing just spread on freshly toasted sourdough.
