Ingredients: 2 1/2 c all purpose flour 2 t baking powder 1/2 t kosher salt 1 c (2 sticks) salted butter at room temperature 1 1/3 c sugar 2 large eggs 1 t vanilla extract 1/4 c sugar for rolling In a large bowl, combine flour, baking powder and salt and set aside In a stand mixer, add butter, sugar and beat on medium until creamy. Reduce speed to low and add eggs one at a time. Add vanilla. Add dry ingredients and mix on the lowest speed until just combined, it'll form a soft dough On a plate, spread out the 1/4 cup sugar Spoon individual pieces of dough, roll into a ball then roll in the sugar and place on a parchment lined baking sheet. Slightly flatten. Place in the refrigerator to chill for 5 minutes Place the refrigerated cookies on baking sheets, spacing a few inches apart. Bake at 350 F for 12-15 minutes until golden brown edges. Allow to cool on the baking sheet for 5 minutes then transfer to a cooling rack to cool completely.
