Instead of doing two videos, I thought I'd just make one and get it all over with. I wasn't interesting in canning this stuff anyway. I make it, I use it, and then I move on with my life. You should, too. Monkey butter is incredible. Monkey Butter is easy. 20 ounces of crushed pineapple, 4 bananas, 1/2 cup of lemon or lime juice, 2 1/2 cups of sugar, 1/4 cup of shredded coconut. I used the whole bag because I really love coconut. Just put it together with about 1/2 cup of the pineapple juice and cook it down until it's mush. I made a double batch and cooked it down until it reduced by 1/3. For the custard ice cream: 2 Cups heavy cream 1 cup whole milk 1/2 cup sugar 1/3 cup dry milk 1 1/4 cup of pureed monkey butter 1/8 teaspoon guar gum 1 teaspoon vanilla 4 egg yolks This ice cream came out amazingly rich and luxurious. Seriously, this stuff is what I think every ice cream flavor should be. It's so rich and decadent, you'll feel the need to go to confession after eating it.
