Layered potato (Rakott krumpli) is a classic Hungarian comfort food made with just a few staple ingredients: potatoes, sour cream, smoked sausage, and hard-boiled eggs. Rakott krumpli was first mentioned in a 1840 edition of the Hungarian National Cookbook. This cozy casserole comes together by stacking slices of each ingredient and finishing with a generous layer of tangy sour cream. Bake it until the top is golden and bubbly. There are many ways to make layered potatoes, but today I’m sharing my personal favorite. I prefer using hot dog sausages instead of smoked sausage because I find they keep the dish lighter and less greasy. I also love adding a generous layer of grated cheese on top for extra flavor. If you’re not a big fan of sour cream, feel free to use a little less in the layers. I think layered potatoes are best when they’re nice and creamy, not dry. Ingredients for 4 servings: 8 medium-sized (1 kg) potatoes 6 eggs 4 hot dog sausages (optional) 1 ½ cups (300 ml) sour cream (I used ~ 500 ml because I like mine creamy) Salt Oil for greasing Grated cheese (optional) Boil the potatoes in well-salted water (about 1 teaspoon) and cook the eggs in a separate pot. Once they’re cool enough to handle, slice them both into thin pieces. An egg slicer works great for this and helps keep the slices nice and even. Cut the sausages. Lightly grease an 8"x6" (20cm x 15cm) baking dish with a neutral oil. Then, spread a spoonful of sour cream over the bottom. It adds a lovely creamy base! Start by layering potatoes, followed by eggs and sausage, then drizzle 2–3 tablespoons of sour cream over the top. You can either sprinkle salt on each layer of potatoes and eggs, or mix a generous pinch of salt into the sour cream before adding it; whichever you prefer is best. Keep layering in this order until you’ve used up all your ingredients. Finish with a final layer of potatoes and top it off with the remaining sour cream. If you’d like, sprinkle some grated cheese over the top for extra flavor, optional, but always a tasty touch! Bake in the oven at 350°F (180°C) for 50–60 minutes, until golden and bubbly.
