Eggless, Alcohol free, Gluten Free Rich Fruit Cake Receipe Ingredients: Freshly Squeezed Orange Juice: 1 Cup Raisins : 1/4 Cup Dates : 1/4 Cup Mixed Tuti-Fruti : 1/4 Cup Almond -Crushed : 1/4 Cup Pumpkin Seeds : 1/8 Cup Cherries - Seeded : 1/4 Cup Cashew - Crushed : 1/4 Cup Cloves grounded : 4 Dried Ginger powder: 1/4 tsp Cinnamon Powder: 1/2 tsp Cardamom grounded: 3 White Sugar : 1/4 Cup Water - Luke warm : 1/2 Cup Plain Yogurt: 1/4 Cup Gluten Free all Purpose Flour: 1&1/4 Cup Baking Powder : 1tsp Baking Soda 3/4 tsp Salt : 1 Pinch Condensed Milk : 1/4 Cup Olive Oil : 1/4 Cup Unsalted butter : 1 small Cube Jaggery Powder :1/4 Cup Lemon Juice: 1tsp Vanilla Essence: 1tsp Method: 1: Take Fresh Oranges and squeeze into a container and store for later use. This will be used for soaking the dry fruits later 2. Next take the Dates, Tuti-fruti, Raisins, Crushed Almonds, Pumpkin Seeds, Seeded Cherries and mix them all in a mixing bowl. Remember to chop the cherries and leave the Almonds Chewy and not finely ground 3. Add the previously squeezed Orange Juice in small increments, add the Spices listed and set it to soak 4. Next we will prepare the caramelin a hot pan and adding boiling water to the sugar after it has melted. 5. Now we will prepare the Dry powder ingredients, Gluten Free Flour, Baking powder, Baking Soda, and a pinch of salt. 6. Take a mixing bowl, add a cube of butter, Condensed Milk, Lemon juice, Olive Oil, Yogurt and mix well 7. Add the powdered Jaggery and mixwell to liquid consistency 8. Next add the Soaked Dry Fruits into the mixture and stir well 9. We will now add the Flour mix tothis mixture and stir well. Remember to mix the Flour in small increments to allow the Flour to mix well into the dough 10. Add the crushed cashew in the Caramel prepared earlier and add it into the mixture 11. Add a Teaspoon of Vanilla Essence and mix well 12. Now pour the dough into a pre-oiled baking pan with butter paper and shake it well to let it set flat 13. Garnish to your taste 14. Set the Oven to Pre-heat to350 degrees, and place the baking bowl in to Bake 15. Allow to bake for about 55 mins to an hour, periodically checking if it is well done. This cake is : Alcohol free, Egg Free, and no added preservatives or chemicals.
