As you know eagles are heavily tied to the Creed (the costume designs, the Eagle vision, etc.). In fact the Assassin symbol is made from the lower part of the Eagle’s skull (more details present in the main story of AC Origins). 2.) "Ezio's Family" doesn't have to refer to the biological family of Ezio, but to the whole Brotherhood as it became the new Family of Ezio.
