Halloumi & Courgette (Zucchini) Noodle Salad, feat. Melissa Hemsley

This super simple, SUPER DELICIOUS salad is one of Melissa's Hemsley's genius concoctions. It features courgette (zucchini) noodles, that you can either make with a spiralizer or simply with a vegetable peeler. You toss the courgette with cherry tomatoes, chopped parsley and mint and lime juice. Mix that with salt, pepper, and extra virgin olive oil, then gently toss in avocado chunks (YUM!). The star of this show is the fried halloumi cheese. Are you guys familiar with halloumi cheese yet? Brits have fully gotten me on the halloumi cheese train -- I've got to say, I'm a total convert now! So for this recipe you'll brown the halloumi on a couple sides in melted butter in a heavy cast iron pan. Then toss that on top of your salad and DIG IN! While we were shooting, Melissa gave me all kinds of ideas on how you could adapt this recipe to fit what you have in your pantry and/or suite your taste buds. You could swap out the fried halloumi for some crumbled feta cheese, goat cheese, or buffalo mozzarella. You could fry the halloumi with a fun spice, like cumin. Instead of lime juice, you could use apple cider vinegar or lemon juice. (But lime is really lovely for a hot summer day!)
