As you can see, our cheese is wrapped in a special maturation plastic bag. First of all, we would get rid of such plastic bag. Meanwhile you are cutting the plastic bag, you can notice the nice smell of the rosemary spreading out. Just a few rosemary will get out of the cheese at the very beginning, no problem. Then we can place the whole piece of cheese on a special board, designed especially for this kind of cheese to be put behind the counters. We would cut the piece with a special cheese knife in halves. It is a hard cheese so we must cut it little by little. Once it is cut in halves, we can slice it in smaller wedges which can be put in these special hermetic plastic containers (kind of Tupperware). Optionally we could close this plastic container with our special Spanish identifying sticker. Now the wedge is ready for the client. The rest of the cheese can be placed again on the golden special board, thus avoiding the rosemary to be spread everywhere. On the second hand, let´s do the same with our soft cheese. As you can see, it also comes with the special maturation plastic bag. It is a soft cheese made with sheep pasteurized milk. We would get rid of the plastic bag as before and then we would proceed to cut the piece of cheese in halves. Then we would use the special knife, or a simple knife, or even with the lyre (GUILLOTINE). As it is very soft, there wouldn´t be any problem. Once again, we would place the resulting cheese wedge in the hermetic plastic container, ready to be served to our clients. We also designed this special expositor for our cheese to be clearly and well differentiated from other cheese. We hope you understand the way we did it!!!
