Add ghee and mix well (moyan). Add curd and knead tight dough using water. Cover and rest for 10–15 minutes. 🟢 STEP 3: Shape Baati Divide dough into small portions. Shape into smooth balls. Lightly flatten each ball. 🔥 STEP 4: Cook Baati in Appe Pan Heat appe pan on low flame. Grease each cavity with ghee. Place baati balls in cavities. Cover and cook on low flame. Turn baati slowly for even cooking. Cook till golden brown from all sides (12–15 min). 🧈 STEP 5: Ghee Dip (Optional but Recommended 😋) Heat ghee in a small bowl. Dip hot baati in ghee for few seconds. 🟡 STEP 2: Prepare Dal (Mixed Dal) Ingredients ½ cup Toor dal ¼ cup Moong dal ¼ cup Chana dal 1 onion (finely chopped) 1 tomato (chopped) 1 tsp ginger-garlic paste ½ tsp turmeric 1 tsp red chilli powder 1 tsp coriander powder Salt to taste 1 tsp ghee Cumin seeds Water Method: Wash and soak all dals for 30 minutes. Pressure cook with turmeric, salt and water for 3–4 whistles. Heat ghee in a pan, add cumin seeds. Add onion, sauté till golden. Add ginger-garlic paste, tomato and spices. Add cooked dal, mix well and simmer 5–7 minutes. Finish with ghee and coriander leaves.
