For: 6 Guests 👉 Ingredients: ➡️ Measurements Milk 3.25% 600 ml Cream 35% 300 ml White chocolate 120 g Sugar 130 g Berries 40 g Gelatin (powder/leaves) 18 g Mango 120 g Mint 3 g Lime 10 g Vanilla extract 5 ml ➡️ Method of Cooking: ✅ For the Panna Cotta Let’s start from the gelatin, mix the gelatin with some water, and let it bloom for about 3-5 minutes. The blooming process will help the gelatin to puff and then melt into the liquids much easier. In the meantime, mix all the milk and the cream in a pot. Add to the pot half of the sugar that is in the recipe and the other half will go with the mango. Add a few drops of vanilla extract. Place the pot with the liquids on the stove and turn it on to 4-5 out of 9. Let the masa warm up and all the sugar dissolve before taking it off. When the liquids are chilled down for a few seconds after coming off the stove, add a few more drops of vanilla extract. Then add the white chocolate and whisk with a whisker until everything is dissolved. After the chocolate is dissolved, add the bloomed gelatin, and whisk the masa until all the gelatin is dissolved too into the liquids. If you want to be sure that you do not have any chocolate or gelatin particles, you can strain the masa. Make sure to taste the panna cotta masa and add more sugar if it is not sweet enough for you. I like this panna cotta slightly sweet as the mango and the berries will give the sweet and sour flavours. Pour the masa into containers or the type of vessel that you want to serve it in and refrigerate for about 8 hours. ✅ For the Mango Place the second half of the sugar into a small pot and place it on the stove on 3-4 out of 9. Let the sugar dissolve and DO NOT stir it, just shake the small pot gently. If we stir the sugar, we will incorporate air and the sugar will change colour to gray. Peel and cut the mango into cubes. Add lime zest and some of the lime juice if the mango is very sweet. Then pour the sugar on the mango when is chilled after coming off the stove. Mix and taste. ✅ For the Berries Coulis Choose any type of frozen berries that you love for this recipe. Let the berries defrost overnight in the fridge and then simply just blend them in a food processor or blender. If the coulis tastes a bit sour, you can add from the sugar syrup of the mango. ✅ Plating When the panna cotta is set and firmed, it is time to plate it. You can serve in the vessels, or you can take the panna cotta out, it is your choice. If you want to take the panna cotta out, place the container in warm water for about 5-6 seconds and then flip on onto a plate. Decorate with the berries coulis, mango glazed cubes, fresh mint, and berries.
