At age 17, Mr Lim has begun his career path making roast meats. Having accumulated 13 years of experience, he sets up a stall of his own at Jalan Berseh - Xiao Di Charcoal Roasted Delights. Char Siew is his highly a sought-after favourite for its caramelised flavour with intense smoky taste. Roasted over charcoal fire, the meat is brought in and out of oven a whopping 8 times until it develops a glossy, caramelized glaze. The result is tender and succulent pork with a slightly charred and glittening exterior. Pork belly has a waffle-like skin, juicy fat and tender meat all in one, with lovely smokiness. Another signature is the roast duck. Marinated with spices, Chinese herbs and Dang Gui, the duck meat is succulent and tender inside, yet crispy outside. The earthy herbs add a savoury herbal note.
