This particular endeavor was inspired by a recipe in Fred Plotkin’s lauded title, The Authentic Pasta Book, which is shockingly out of print (though used copies can be found online and hopefully at your library). I’ve had my tattered copy since college; it’s how I learned the right way to make all’Amatriciana, cacio e pepe, carbonara, and many other classic dishes.
