Once a grain of the past, millets are now the food of the future. A bajra bhakri takes time, but for farmers who toil from dawn to dusk, its dense, earthy richness fuels their strength. Mandia pej (ragi soup) has long been their nourishment—cooling in summer, strengthening in winter, and a bowl of sustenance passed down for generations. Yet, millet farming is fading. Low market rates, labour shortages, and unpredictable weather make it harder to sustain these crops. But the wisdom of the past is returning—doctors now recommend bajra bhakri for better health, and urban cafés serve millet wraps and breads. From rural kitchens where papads are handcrafted over days to city tables embracing tradition anew, millets bridge heritage and innovation. 0:00-1:09: Intro, foraging in the forests of Chhattisgarh 1:10-2:46: The process and labour involved in growing the Ragi crop 2:46-4:31: Why the Ragi soup became a popular drink. 4:32-6:11: The recipe for Ragi soup and how to consume it 6:12-6:47: How to make Ragi rotis using Sal leaves 6:48-7:58: The allure and benefits of the Ragi soup 7:59-8:25: Intro, younger generations struggle to make Bajra rotis in rural Maharashtra 8:26-8:50: How Bhakri is introduced into the diet of new mothers 8:51-9:54: The process of growing and farming Bajra 9:55-10:49: Making and consuming millet snacks - Bibde and Kharodi, and learning to make a living out of it! 10:50-12:07: Millet and wheat consumption - why seasonality and labour are important factors. 12:08-12:34: Women’s labour involved in the roti-making process 12:35-13:39: The process of making millet snacks 13:40-14:36: The process of making Bhakris 14:37-15:41: A family makes the snacks and gathers together to share it 15:42-16:18: How millets are becoming a means of empowerment 16:19-17:44: Why farmers are moving away from millet-farming, even as demand in the city rises 17:45-18:56: The city life and its impact on one’s diet as explained by Ishi 18:57-20:16: How Mumbai’s food culture is changing and why young people are trying millets for health 20:17-21:07: Recipe for a millet salad 21:08-21:51: Recipe for a millet risotto 21:52-22:18: Recipes are also a form of storytelling 22:19-23:03 End credits 23:04-24:55: Podcast Episode Preview More than food, millets are resilience on a plate.
