This bolognese sauce gets me compliments every time I make it. It works with any kind of pasta you’d like, from tagliatelle to linguine. This time I’ve chosen to make it with Conchiglie and it was gorgeous! Here’s the recipe: 1. Evenly dice some shallots/onions, celery and carrots finely. 2. Melt some butter and EVOO and sauté this in a pan on medium heat, allowing it to sweat down until translucent. Then add some minced garlic, a Knorr chicken stock pot and stir. 3. Add pork and beef mince to the pan and brown. 4. Then dice some fresh tomatoes and add to the same pan and stir. Allow to simmer for few minutes. 5. Add some chicken stock powder or salt, then add cracked black pepper, some honey, ketchup and stir. 6. Then add some passata or chopped tin tomatoes. Then add some white wine, stir and leave to simmer for 40 - 60 minutes on low heat whilst stirring occasionally. 7. Add more salt if needed and then add boiled pasta into the sauce, stir and allow to simmer for ten minutes. Enjoy! You can also create a baked pasta with this which would be absolutely delicious.
