Cranberry sauce, sweet potato casserole, pineapple stuffing, stuffed acorn squash and bacon wrapped asparagus with a honey balsamic glaze. All recipes to be frozen must be completely cool. I first wrap or cover in plastic wrap and then provide a second layer either with a freezer bag or aluminum foil. To reheat sweet potatoes, acorn squash, pineapple stuffing, allow to thaw in the fridge or on counter overnight and bake at 325-350 covered for 15 minutes and then uncover for another 5 minutes or until heated through. To reheat rolls, allow to thaw overnight in fridge only and then bake at 325 for 8 minutes, brush with butter. To reheat cranberry sauce, allow to thaw in fridge overnight, heat on stovetop over low temp until warm throughout. Kelsey's Tried and True Dinner Rolls: 2 1/4 tsp active dry yeast 1/4 cup warm water 4 Tablespoons Honey 2 cups all-purpose flour, plus more as needed 1/2 teaspoon salt 1/2 cup whole milk 2 Tablespoons unsalted butter, melted, plus more for brushing after bakers twine if shaping into pumpkins Activate Yeast. Combine all ingredients. Knead for 5 minutes and then let rise until doubled, 30 minutes to an hour. Shape into 12 rolls or pumpkins, let rise another 30 minutes. Bake at 350 for 20-25 minutes. Cranberry Sauce 1 12 oz bag fresh cranberries 1 cup water 1 cup organic raw cane sugar 1 tbsp vanilla(less if you aren't a huge fan of vanilla) 2 tbsp bourbon 1 tsp orange zest Stuffed Acorn Squash 4 small acorn squash apple cider for brushing 3 apples diced 1/2 cup dried cranberries 1/2 cup raisins 1/2 cup chopped pecans 1/2 tsp cinnamon pinch nutmeg pinch cloves pinch thyme pinch salt 1/4 cup maple syrup for drizzling 1/8 cup coconut sugar(or brown sugar) for sprinkling Sweet Potato Casserole: 3 lbs. sweet potatoes about 4 medium 2 eggs ¼ cup salted butter melted ¼ cup heavy cream 1/2 cup brown sugar or coconut sugar ¼ cup pure maple syrup 1 tsp redmond real salt 1 tsp ground cinnamon pinch ground ginger pinch ground nutmeg 1 tsp vanilla topping: 1/2 cup gluten free flour or AP flour 1/4 cup soft butter 1/2 cup coconut sugar or brown sugar pinch salt 1/2 tsp cinnamon assemble and bake at 350 for 35-40 minutes Pineapple stuffing 1/2 cup soft butter 4 eggs 1 cup raw can sugar 1 20 oz can crushed pineapple, drained 5 cups packed bread cubes. Bake at 350 for 1 hour, let sit to firm up Bacon Wrapped Asparagus Wrap 3-5 spears with a half piece of bacon, repeat.
