BBQ Brisket is one of my favorite things to cook. My briskets usually come out really good, but I have had a few that were under par. I prefer to smoke my briskets on an offset smoker because nothing beats managing that firebox if you have the time. I also have made several briskets on my Weber Smokey Mountain, and while those briskets were good, I just don't feel the same sense of accomplishment as I do when I use my offset smoker. It was nice getting out there on that New Braunfels Smoker. I hadn't used it in a year, so I figured I would give it some love. It took a little more effort to control the fire than my other offset smoker, but it was so good getting back on the smoker I basically learned on.
