We all know that noodles were introduced to us by Chinese Immigrants centuries ago. Then, some Spanish influence also was brought into the mix. Therefore, numerous regions localized and made versions of the many noodle dishes we now learn to love and enjoy. That is how Pancit Bihon (Stir-Fried Noodles) came to be. Stir-fried noodles or Pancit Bihon is another type of noodle dish in the Philippines. Pancit Bihon are popular in many islands of Luzon, Visayas, and Mindanao. Different regions have their variations and unique ways of cooking them. The noodles are either made of cornstarch or rice flour. Stir-fry is the standard cooking technique with onions, garlic, and vegetables such as carrots, cabbage, green beans, celery, spring onions, or whatever ingredients are available. Some would add chicken, pork, shrimp, or a combo for protein. We later discovered the different seasonings and make use of either toyo (soy sauce) or patis (fish sauce), with some salt and pepper, and calamansi or lemon. Others have used water or chicken stock for added flavor. Pancit Bihon is commonly served for special occasions like Christmas, New Year, fiestas (festivals), family gatherings, and most especially on birthdays (for "long life" as the elders would say).
