Baingan Methi ki Sabzi is a flavorful Indian dish made with tender eggplants (baingan) and fresh fenugreek leaves (methi). The combination of the slightly bitter methi and the soft, earthy eggplants is balanced with spices like cumin, turmeric, red chili, and coriander. This simple yet aromatic sabzi pairs perfectly with roti, paratha, or steamed rice, offering a wholesome and nutritious meal. #chefharpalsingh #namakshamak #baingan #food #recipe #indianfood Ingredients Quantity Oil 1 ½ tbsp Cumin seeds 1 tsp Garlic chopped 1 ½ tbsp Dry red chilli 2 no Asafoetida 1 tsp Onion chopped 2 no Brinjal 6 no Tomato chopped 2 no Green chilli chopped 3 no Salt to taste Turmeric powder ½ tsp Red chilli powder ½ tsp Coriander powder 1 tsp Cumin powder ¼ tsp Garam masala ½ tsp Dry mango powder 1 tsp Fenugreek leaves 1 bunch Coriander sprig 3-4 no Mint sprig for garnish Method :- 1. Place a kadai on medium flame and heat oil. Add cumin seeds, chopped garlic and dry red chilli let them splutter. 2. Add asafoetida and sauté for a minute until fragrant. 3. Add chopped onion and sauté for 4-5 minutes until golden brown. 4. Take a brinjal and use a knife to slice off the stem at the top. 5. Slice the brinjal lengthwise into quarters. Cut each quarter into small, evenly sized cubes. 6. Add brinjal cubes, chopped tomato, chopped green chilli and salt mi well. Sauté for 2 minutes. 7. Add turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala and dry mango powder mix well. Sauté for 5 minutes. 8. Add the methi leaves and stir everything together. Mix well with the masala. 9. Cover and cook on a low flame for 6–8 minutes, stirring occasionally. 10. Take fresh coriander sprig and chopped well. Add in that and mix well. 11. Once the eggplants are soft and the methi is well incorporated, side out in a serving bowl and garnish with mint sprig. 12. Enjoy with hot phulkas, parathas, or steamed rice.
